All fine cutlery was once made of carbon steel, hand forged by blacksmiths whose artistry defined entire cultures. Once you use a carbon steel knife it's hard to imagine why they ever fell out of favor. Incredibly easy to sharpen, they make the most mundane cutting chore a pleasure. Noted for their incredibly rich patina, these tools require surprisingly little maintenance.
Carbon steel knives are an example of a tool that, when properly maintained, improves with use. Regular sharpening and a simple application of oil is all that is needed.
